Super Easy Nachos

Good idea for when you're short on time and need a fast meal idea.

Super Easy Nachos

  • 1 bag nacho chips
  • 1 can black beans, rinsed and drained
  • 1 small onion, chopped
  • 1 green pepper, chopped
  • 1 small can diced jalapenos
  • 1 block shredded cheese, your choice

Layer chips, beans, veggies and cheese. Put in preheated 350 degree oven for 15 minutes. Top with sour cream, salsa, guacamole.

*** Add whatever other beans and veggies you want.

Curried Lentil Soup

Curried Lentil Soup

  • 1 pound sweet potatoes (2-3 med) peeled and coarsely chopped
  • 1 cup uncooked lentils, rinsed and drained
  • 1/2 cup chopped onion
  • 1 small jalapeno pepper, seeded and finely chopped
  • 1 tbs red pepper paste
  • 3 cloves garlic, minced
  • 3 14oz cans vegetable broth
  • 1 14.5 oz can diced tomatoes, undrained
  • 1 tbs curry powder
  • 1 tsp ground ginger

Sour Cream or make it vegan and add soy yogurt

In a 4-5 qt slow cooker combine sweet potatoes, lentils, jalapenos, garlic and onion. Stir in broth, undrained tomatoes, curry powder and ginger.

Cover and cook on low heat for 8-10 hours or high heat 4-5 hours. Top with low fat sour cream or vegan yogurt.
I forgot to take a pic after it was done cooking. It turned out SO YUMMY!

Thai Peanut Sauce

Thai Peanut Sauce
served over rice (pad thai) noodles and veggie stir fry
  • 1 can coconut milk
  • 2/3 cup smooth peanut butter
  • 1 tsp sesame oil
  • 1 tbs rice vinegar
  • 3 tbs soy sauce
  • 1 lime, squeeze and use juice
  • 1 tbs red pepper paste (or hot sauce)
  • 1 1/2 tsp minced garlic
  • 1 tbs grated ginger root
  • 1/4 cup cilantro

Put all ingredients in blender and blend until smooth. Serve over any rice/pasta/veggie combo you’d like.

Modify the recipe to suit your own taste. I like more lime so I used a large lime. I also added a spicier pepper paste instead of hot sauce.
